Momma Smiley's Bread Recipe

In a 2 Cup measuring cup dissolve
2 Tblsp Active Dry Yeast
1 Tbls Sugar
1/2 C Warm Water

Set aside and add the following into your mixer:
2/3 C oil
2/3 C honey
2 Cups Warm water (minus 4 tblsp, replaced by lemon juice)
1 1/2 Tsp. Salt
4 Tbls. Lemon juice
4 Cups Whole wheat flour

After the yeast mixture has sat for 5 minutes add to the mixing bowl. Mix for 5 minutes, then add 2 more cups of WW flour blend for 3 minutes adding a tiny bit more if needed . This is a very sticky dough and you don’t want to add too much flour. I usually only ever add a total of 6 1/3 C of flour. Cover and et stand 10 minutes.
Put on lightly floured surface and oil your hands. Shape into loafs and place in oiled bread pans, oil the top of the dough. It will make 3- 8” x 4” loafs. Let rise until doubled in size about 20 to 30 minutes. Bake at 350 degrees for 25 to 30 minutes. Take out of pans and place on cooling rack. This bread will seem super soft so let it rest on the cooling rack for 5 minutes before diving into it. This is the sweetest most moist bread I’ve ever had. I love it!
